Bhatkali Sweet Raita/Curd


A perfect complement to the Biryani is the raita served along with it. The subtle sweetness of  the raita is perfect with the spicy Biryani.

All my siblings and I are curditarians (Whatever that means).We would never sit for lunch without having plain curd. This raita was Biryani day special .

In this easy recipe, Sugar, salt, black pepper, cumin powder and chat masala is whipped well with plain curd. If using thick yoghurt, ¼ cup water is added. The consistency should not be very watery.


Chopped or grated cucumber, finely chopped onions and coriander leaves along with a sliced green chilli is mixed with the curd. Adding grated carrot is optional.


Mix well together in the curd. Adjust the sugar and salt to your preference.

This recipe serves 2-3 people.

Each serving (1/3rd portion of the raita) will provide approximately 70 Calories.


Here is what you’ll need:


200g curd
½ tsp salt
1 ½ tsp sugar
¼ tsp black pepper
½ tsp cumin powder (Jeera powder)
¼ tsp chat powder
1 small onion
1 grated or chopped cucumber
½ grated carrot
1 sliced green chilli
2 tbsp coriander leaves (Dhaniya)

Method:

  1. Grate or chop the cucumber and carrot.
  2. Chop the onions into fine pieces.
  3. Whisk the curd with the salt, sugar, pepper, and spices.
  4. Add required amount of water.
  5.  Add the chopped vegetables to the curd mixture. 
  6.  Garnish with coriander leaves.
  7. Alternative flavor: For those who love a garlicky flavor, instead of adding the cumin powder and chat powder, add half a clove of garlic.
