Garlic and Olive Oil Vinaigrette Salad


What’s your kid’s favourite food? Chips and Chocolates? Well, my two year old loves carrot and cucumber sticks, absolutely tops his list of favourite foods. And if it’s a salad with a vinaigrette dressing then it’s his special treat.  It’s a daily story that I get to witness father and son fight for a bowl of salad, not to mention his love for salads may be inherited from me. J

This is the easiest recipe for a salad. Just chop the freshies the way you like them and toss it into a bowl of vinaigrette.

I have used a whole cucumber, a small carrot, a small tomato deseeded, 2 tbsp black olives and a tsp of fresh chopped mint leaves. Iceberg lettuce is a perfect combination with this type of salad dressing.

This recipe serves 2 people.

One serving of this recipe provides approximately 67.5 Calories.

For the dressing, here is what you’ll need:


1 tsp apple cidar vinegar
1 tsp lemon juice
1 tbsp olive oil
1 clove garlic
¼ tsp paprika/ red chilli powder
½ tsp salt
1 tsp sugar

Method:

  1.  Finely grate the garlic or crush using mortar pestle.
  2. Mix the rest of the ingredients in a bowl till the sugar dissolves.
  3. Toss in the salad and serve with iceberg lettuce.

This salad is extremely light and refreshing. For all those health conscious people out there, make the salad a major portion of your meal.
